Our Story
Diamond Spur Butcher Shop & Deli was founded by Chef Marc Marrone and hospitality veteran Todd Lunger — two longtime Las Vegas operators who grew tired of the broken food system.
We own and operate regenerative ranches across Arizona (Diamond E), South Dakota (Evergreen Ranching), Kansas, and Missouri with our ranch partner Cindy Tolle. Our cattle are 100% grass-fed and pasture-raised. No feedlots. No hormones. No antibiotics. All ranches are Audubon Certified for practices that restore soil health and support wildlife habitat.
The shop on Fort Apache Road is our way of bringing that integrity home to the community — a full-service butcher counter paired with a neighborhood deli inspired by the classic markets of the Bronx’s Arthur Avenue.

Walk up to the case and choose from meticulously trimmed ribeyes, New York strips, briskets, ground beef, and more — all sourced directly from our regenerative ranches. We also carry responsibly raised pork, chicken, and eggs.

Located in the southwest valley on South Fort Apache Road. Easy access with parking available. We’re right in the heart of the Rhodes Ranch / Southwest area.
Lunch and early evening are busiest. We recommend calling ahead if you’re after a specific cut or sandwich — favorites do sell out.
